Choosing for your meal
Decide how many people you are feeding and whether the meat will be combined with vegetables, a sauce or other ingredients. Confirm the selected weight or quantity and ask Lee which preparation suits this particular cut if the instructions are not listed. Any seasoning or marinade should come from the product details, not an assumption based on the name.

Cooking Diced Pork
Use a covered braise or your slow cooker’s recommended method for this cut. Check both thorough cooking and tenderness; timing depends on size and appliance. For poultry, pork, minced meat, sausages, rolled joints and mechanically tenderised meat, cook thoroughly: the centre should reach 70°C for 2 minutes, or 75°C for 30 seconds. Clean the thermometer before and after checking.
How to slow cook meatLee’s tip
Bring out the best in pork
Pork loves sweetness and spice — apple, fennel, sage and mustard all work. Season well and always cook it through.
What goes with it?
Cabbage, roast potatoes and apple. Pinot Noir, a dry cider or an alcohol-free apple spritz.
